A little salt, a little smoke, and plenty of cold, fresh Dolomite mountain air. Speck is a truly beautiful, smoky ham worthy of its own distintion. Our partners select only the finest pork legs. After seasoning and allowing to cure with salt, the legs are smoked at a low temperature of 65 degrees fahrenheit before being aged in cool cellars for 20 months.
