Trivia: The much beloved ribeye is actually made up of 2 muscles. The outer, marbled part of the ribeye is technically known as the spinalis dorsi, and more commonly referred to as the ribeye cap. Among connoisseurs this is the pinnacle of meat, the absolute gold standard. 

  • Indoor cooking - Heat Butter Ghee in a cast iron skillet until ghee is very hot. Drop steak in for 3 to 4 minutes per side until golden crisp from outside and pink inside. Rest for 5 minutes and enjoy.
  • Grill - Preheat grill to 250 to 300c (the hotter the better). Sear steak around 4 minutes per side. Remove and let rest for 5 minutes.
