Choosing your cut:
- Flat – The lean end. Best for slicing clean, structured portions. Think roasts, dinner parties or sandwiches.
- Center – The perfect balance of lean and juicy. Cut from the heart of the brisket, this centre portion combines part flat and part point.
- Point – The indulgent end. Fat heavy and packed with flavor. Perfect for shredding, burnt ends or BBQ cookouts. Anything a bit messy!
