Eating tongue is a big part of the nose-to-tail movement, of which we are avid advocates. Responsibly eating beef means eating every part, and this is a very rewarding way to do it.
Method: Couldn't be easier. Simmer your beef tongue with broth in a covered pot for 3 hours on low heat. Allow to cool and peal the skin carefully. Slice thinly. At this point, you can season and enjoy in tacos, or better yet return to a sauté pan with onions, mushrooms, butter and some carnirub. Sauté for 5 minutes and you're ready to go.

Trivia: In Mexico, tongue is often enjoyed in tacos. This is known as Lengua and is considered a delicacy. Many tourists try this and wax lyrical about it, not knowing that they've just consumed tongue.
