Trivia: Essentially the Beef Breast, this muscle works hard on the cow and is therefore well marbled and bursting with flavor. Our Brisket meat is all natural black Angus. Brisket's fall apart, tender meat experience can only be experience when the meat fibers and connective tissue is given time to gelatinize over many hours of slow cooking.

How to make brisket?
Technique:
Season very liberally and braise in stock for 4 to 6 hours.
