Preferred Method: Braise low and slow

Technique:
Get yourself a good enameled cast iron Dutch oven like Le Creuset or Staub or similar. Heat some ghee or tallow on high heat and brown your seasoned shanks on all sides until a good dark brown color is achieved. Remove the shanks, add lots of seasoned chopped or sliced onions and sauté for 5 minutes. Add Beef broth and optional red wine. Cover and place in 180 degree Celsius oven for 2.5 to 3 hours. Serve over rice or potatoes and garnish with chopped chives for ultimate presentation.
